Winner Winner Chicken Fajita Dinner
Sooooo…….. I hate to brag, but I have this amazing kitchen!! As you know, I like to cook and share some of my recipes!
This one is a throwback to when I first started cooking as a single woman living on her own. I moved into my first home out of my parents house waaaaayyyyy back in 2003! It was a quaint little condo in North Knoxville. I got my first real set of pots and pans, which I believe my mom purchased for me!!! So, I decided to buy some cookbooks (yes, this was before Pinterest and recipes on internet weren’t readily available). One of my first cookbooks was a Mexican cookbook. My favorite food group!
The recipe I remember trying first was Chicken Fajitas! So, I was feeling nostalgic when I unpacked all of my cookbooks. I decided to make the Fajitas for dinner. I just absolutely love the seasoning that the chicken marinates in.
I also love all of the toppings, and of course the sautéed onions and peppers!!
Now, my family is obsessed with corn, so I just use a good ol’fashioned can of corn!! You can’t scratch make everything. Well, you can but you will be in the kitchen for a long time instead of enjoying your life!
My motto is usually about 60/40. Being that 60% of my meal is fresh, homemade ingredients and 40% comes out of a can, box, or the freezer section!! It’s okay! That doesn’t make you a bad cook! It makes you SMART cook!
