Healthy Peanut Butter Chocolate Bars

I thought we could use a healthy sweet treat during this Challenge!! I also looked through my pantry to see what I already had, and I had everything I needed for these healthy PB Chocolate Bars!! Yum!!

Healthy Oatmeal Peanut Butter Bars

Ingredients

  • ½ cup creamy peanut butter
  • ¼ cup coconut sugar or brown sugar*
  • ¼ cup honey
  • 1 large egg room temperature*
  • 2 tablespoons melted coconut oil*
  • 1 teaspoon vanilla extract
  • 1 cup old fashioned rolled oats
  • ¾ cup white whole wheat flour
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup chocolate chips

These were very easy to make, and if you use an egg substitute they can be Vegan as well. You mix the first 5 ingredients (if you notice the egg needs to be room temperature. This is because we are using coconut oil. Coconut oil is solid at room temperature and the cold egg may cause it to solidify).

This recipe had a great tip. Just add your egg to a cup of warm water if you are in a rush and have a cold egg!! That will take the chill off the egg. I let mine sit for a few minutes.

I then added the dry ingredients except for the chips which I folded in last!

The recipe called for an 8×8 dish, but I only had a small casserole dish, which worked perfectly!

They baked for about 15 minutes and came out perfectly brown! I was able to cut mine into 12 bars.

I placed 11 bars in a plastic air tight container!! I had to try one!! 🙂

Calories: 1 bar – 230 cal and 11g fat plus 6 g Protein.

This makes a great mid-day snack or a sweet treat with coffee. It’s wholesome enough to fill you up.

    I think I have everything to make them. You know how I like something sweet with my coffee!
