Day 20: Healthy Cooking Challenge
My favorite food is Mexican food!! I think one of the reason is you can have so many variations of tacos, fajitas, and enchiladas (my top 3)! If you are a vegetarian or a meat eater you can have them any way you want.
I personally love Chicken Fajitas. It’s my favorite go to at a Mexican Restaurant!!
Now I’m cheating a little because my go to Chicken Fajita meal is already written on another post! I also like foods that you can build on your own. You have more control over the calories. Here’s the calories, since I don’t have it on the original recipe!!
3 oz of Grilled Chicken – 120calories 2g of Fat
I would suggest whole wheat Tortilla (Taco Size) -120 cal 2g of Fat
Peppers and Onions – 1/2c – 75 cal and 5g of Fat
